Papaya c-cktail

3 cups diced papayas
2 tablespoons lemon juice
2 tablespoon brown sugar
1 teaspoon grated onion
1 tablespoon butter
1 tablespoon catsup
3 tablespoons mayonnaise
Optional chopped jalapeno and/or Serrano chiles
Mixed greens

Marinate fruit in juice for 30 minutes; chill. Heat sugar over medium heat until melted, stirring constantly; gradually add the onion, butter, catsup and mayonnaise. (NOTE: If you want a spicy note, add chopped jalapeno or serrano chles.) Cook over low heat until the sauce is well blended; chill. Serve papaya in c-cktail or sherbet glasses topped with sauce and garnished with lettuce. Makes 6 servings.

Hola, not to sabotage the thread but, is there some information that an AVID FAN of alcoholic beverages could use to wean one off of scotch and into the world of agave ?

yes, i would and should go throught the archives as far as tequila and mescal. any directives would be appreciated to meld into the culture.

I think you need to take the same approach as you would when changing dog food brands.

You will need to slowly dillute your scotch using tequila, over a span of a week or so, until you no longer have any scotch in the tequila.

I recomend the following:

Day 1: 80% scotch 20% tequila
Day 2: 60% scotch 40% tequila
Day 3: 40% scotch 60% tequila
Day 4: 20% scotch 80% tequila
Day 5: 0% scotch 100% tequila
