(Full Disclosure, this is an Authentic Hawaiian Recipe from my late MIL's (mother-in-law's) Recipe Archives
Italian Spaghetti with Coconut
Spaghetti cooked and blanched with cold water
Ground meat – lightly browned
1 onion, thinly sliced, very lightly browned
Grated cheese
Tomato sauce with cream
Coconut milk
Cloves of garlic
Sliced sautéed mushrooms,- lightly browned
Two handfuls of freshly ground coconut
Lightly brown the meat and onion—too much cooking will make it bitter.
Put this in a rather large kettle and add the cooked spaghetti, tomato sauce with cream, grated cheese, minced garlic, salt, pepper and let simmer
very slowly for about ½ hour.
Add the sautéed mushrooms and divide into servings and sprinkle the fresh grated coconut thickly over each serving
