Tortilla Soup

Thought while we're waiting on some news of Itzel, we could see who has the best Tortilla Soup..... Recipe or Restaurant....

The best we've had was in TJ at the Camino Real. Wish I could remember the name of that restaurant as everything we ordered was excellent! There were a lot of stairs leading up to that restaurant. Anyone here remember the name?

a buddy traded me my sandwich for his tortilla soup at lunch last month. i got the better end of the deal! he gave me the recipe as i was basically floored by how good it was. well, when i made it the flavor was not even close to as good as he made it. mine was decent, but not the same...... whatever that means!

Most chefs will tell you the same thing:


It's easy to get the recipe, it's just not easy to duplicate the dish.
Much of the preparation is in the timing of the ingredients.

Here's what I usually do. Recipe changes a little each time, depending on what I have in the fridge, or what I remember to add. Made a big pot last weekend, and it was gone before the day was out!

Boil some chicken. Add: a cut up opion, couple cloves of garlic, some chiles (whatever you have on hand, and how spicy you want it). If you like carrots, you can throw some of those in too. I usually use chicken breasts, 3-4, and usually boil for about an hour. (carrots maybe 20 minutes).

For spices I put in a bay leaf or two, some cumin, some oregano, maybe some basil or thyme, maybe some chili powder, and salt and pepper of course.

When the chicken is done, I take it out to cool, and then shred it and add it back in (after the tomatoes have simmered for awhile).

I then add a can of crushed tomatoes, and some granitos (corn...hominy?), if I have some.

Serve over crushed tortilla chips, with some cheese, avocado, and lemon squeezed in.

I won't say this is the best, but the family likes it!

Yep....maybe it's something like that.
YUMMY.....I'm still looking in the stores for Cholesterol in a can....you know....with a label that says CHOLESTEROL. That's what makes food taste good.

Sopa de Tortilla

(Tortilla Soup)

6 Tortillas, cut in strips (corn)
1 Onion, finely sliced
2 Tomatoes, finely chopped
1 Clove garlic

Chicken stock and bits of chicken
Salt and pepper
*Grated cheese

Fry tortilla strips in hot oil, let brown lightly. Drain, set aside.

In a saucepan fry tomatoes, garlic, onion and chicken bits in a little oil… season … add chicken stock.

Let simmer

When ready to serve add tortilla strips, let simmer 3-5 minutes. Serve. Tortillas should still be crisp but not hard.

*Soup should be served with grated dry Mexican cheese on top.
Queso Jalisco is a good brand found in Mexican grocery stores. The cheese is very crumbly. Grated Parmesan or Romano may be substituted

I've seen the strips packaged and ready to go in the stores. Saves making one more mess.

1 package corn tortillas
cooking oil for frying tortillas
6 medium dried pasilla chiles
4 medium garlic cloves chopped
3 large ripe tomatoes
2 medium white onions chopped
1 whole chicken cut up
6 cups chicken broth
1 teaspoon ground cumin
1 1/2 teaspoon oregano
2 avocado peeled, pitted, chopped
6 ounces feta cheese
2 limes sliced
3 bay leaves
3/4 teaspoon majoram
3/4 teaspoon thyme
1 teaspoon black pepper corns
1 bunch cilantro chopped

Place chicken in a large pot with one thinly sliced onion, the three halved garlic cloves, and 4 1/2 quarts of water. Add thyme, majoram, bay leaves, and pepper corns. Cover and bring to a boil over high heat. Reduce heat and simmer until meat pulls easily away from the bones (about 1 hour). Lift out chicken, shred meat and set aside. Return bones and skin to pot and add six cups home made chicken stock. Simmer for 1 - 2 hours. Strain the broth through a fine wire-mesh strainer into a bowl. Discard fat that rises to the top. Remove stems, membranes, and seeds from three of the chiles. Tear into 1 inch pieces and place in a saucepan with water to cover. Bring to a boil then remove from heat and let rehydrate for 30 minutes. Roast tomatoes, chopped garlic, and 1 onion (chunked). Place in blender with the rehydrated chiles and one cup of the broth and puree until smooth. Heat 1 tablespoon of the oil in a saucepan to medium high heat and add the puree. Stir for several minutes as the mixture thickens and darkens. Combine the puree with the broth, add cumin and oregano and simmer for 30 minutes. Cut tortillas in half and into 1/4" strips. Fry in batches in hot oil until crisp and lightly browned. Lift out and drain on paper towels. Fry remaining chiles in oil briefly and cut into rings. Place the garnishes, (tortilla strips, avocado, limes, cilantro, and cheese) in bowls. Ladle soup over tortilla strips and garnish as desired.

My wife puts parsley in gumbo, once she got cilantro(it looks a lot like parsley) by mistake. Presto!! Mexican gumbo. It was good. Throw a little cilantro into most anything and it's gonna have a Mexican flavor.;)

I DID help serve at a soup kitchen for many years as a member of a parrothed club volunteer. I WAS impressed with the size of their kitchen (very large) but had inadequate cooking utensils. I have since spoken to some of my used restaurant equipment vendors and they managed to help out with much needed kitchen utensils. The kitchen is now capable of serving about 1300 people at one time.
