The link is in English and the information about why the cuisine was awarded this designation is about a third of the way down the article. In a nutshell tho', it's because the cuisine is an expression of Mexican culture that is special because of it's age-old roots, continuity over time and the originality of its products, techniques and procedures. And the fact that as a cuisine it has never been divorced (their term, not mine) from it's cultural context and still plays a role in the life and cultural point of view with communities and individuals today as it did thousands of years ago."

Can't go anywhere with that link, perhaps 'cause of the three periods at the end?
I was hoping to see the logic behind the catagorization of the cuisine as "Mexican" when in fact it's a mixture of product and technique from Mesoamerica and Spain.
I guess that goes for Mexicans as well although most will deny the first half.

Thanks ---the link works just fine now and it is very interesting. Love to see those different items recognized and honored.

Mexican food---one of the most delightful parts of traveling all over Mexico is the local food----so different in every part of Mexico along with so many blended and different cultures and languages.
