How do you like to prepare Robalo- recipes or special spices?

The only robalo I have ever eaten I caught fishing in the Mag Bay estero with my friend Ruben Duran. It was about a 15 pounder. We took it back to
Ruben's place in Lopez Mateos where he lit a fire in a pit in his back yard. He then boned the robalo, stuffed it with tomatoes, chiles, black
olives, cebollas, etc., wrapped it in aluminum foil, placed it on the coals in the pit, and covered it with dirt. We then dealt with the rest of the
catch of the day, which was considerable, and in an hour or so dug up the robalo. It was some of the best fish I have ever eaten.

They are great fish. You can look up recipes under "Snook".
But any way you can cook a fish, robalo is good.

That sounds really good Bill. It tended to fall apart on the BBQ. It was good but we're thinking it could be even better if prepared correctly. Foil
should help hold together the fish, the flavor and the juices.

When you wrap anything in foil and seal it, you are steaming it, no matter what the heat source. Snook or any other like fish is good cooked that way.
I have found adding tomatoes, onions green peppers and some cajun seasoning in the foil package does the job....Or keeping it simple, butter, lime
juice, salt and pepper...I do it in the oven...

The restaurants around Vera Cruz serve a great soup with robalo. You may consider that.
