This makes a great brunch dish. Reheats wonderfully in the oven, not so much in the macrame oven, too mushy. You want the bread chunks to be
crunchy.
Breakfast Christmas Casserole
Amount Measure Ingredient -- Preparation Method

1 pound ground chorizo sausage
1/2 each green bell pepper, diced
1/2 each red bell pepepr, diced
1 small Yellow onion diced
3 each green onions, sliced
8 each eggs
1-1/2 cups milk
salt and pepper to taste
1 teaspoon dried Italian herbs
1 French baguette, cubed (6 to 8 cups)
8 ounces cheddar cheese, grated
Brown sausage, add peppers and diced yellow onions (not the green onions), cook until soft, drain and let cool.
Preheat oven to 350
Combine eggs, milk, salt and pepper, green onions, herbs, half of the cheese and the cubed bread. Mix well and pour into greased 9x13 casserole dish.
Top with the remaining cheese. Can be made a day ahead to this point, and baked the following morning.
Bake covered for 30 minutes, then remove foil and bake additional 15-20 minutes until browned.
