Coca-Cola Taste Test: High Fructose Corn Syrup vs. Sugar

Twenty editors blind taste-tested the two cokes, side by side, and found ...

85 percent of our tasters could tell the difference between regular Coke and Mexican Coke.
80 percent of our tasters preferred Mexican Coke to regular Coke.

Nearly 30 years ago, Coca-Cola switched over from sugar to high-fructose corn syrup to sweeten America's beloved carbonated soft drink. With corn subsidized by the government, its sugary syrup became a more affordable option for the beverage company.

While this switch went largely unnoticed for quite some time (though it's common knowledge these days), it didn't take place on an international level. Actually, the sweetener used in Coca-Cola varies from country to country based on what ingredient is most affordable for the bottling plant's location. And in many countries, Mexico included, Coke is still made with real sugar.

Mexican Coke, which comes in an old-fashioned glass bottle, was first imported to the U.S. market for the immigrant population and initially could only be found in little bodegas. But it's now available in a number of major grocery stores across the country.

Why is Mexican Coke sharing the same shelf as regular Coke? The answer is simple: it has a cult following that has created quite a demand. This sugar-sweetened soda ranks high on the list of foodies across the country and even has a Facebook page with thousands of followers. Its fans believe that Mexican Coke has a "more real, authentic flavor," though the Coca-Cola company denies that there's a discernible difference between any of their cokes.

Coke spokesman Scott Williamson told Rob Walker of the New York Times that despite the different use of sweeteners “all of our consumer research indicates that from a taste standpoint, the difference is imperceptible.” We decided to find out for ourselves: is there a palatable difference between regular Coke and Mexican Coke? Or are people just charmed by Mexican Coke's nostalgic glass bottle? Our team of 20 editors conducted a taste test to get real answers.

The Verdict

Twenty editors blind taste-tested the two cokes, side by side, and found ...

85 percent of our tasters could tell the difference between regular Coke and Mexican Coke.
80 percent of our tasters preferred Mexican Coke to regular Coke.

Here's what our tasters thought:

Regular Coke: "Tastes thicker, sweeter." "Didn't taste good, kind of bland." "Has interesting, almost vanilla, aftertaste, yet weird chemical flavor at first." "Tang -- long aftertaste."

Mexican Coke: "Viva Coca-Cola Mexicana!" "I don't really like soda, but the sugar variety is quite palatable." "Has a cleaner, less artificial flavor." "A little brighter." "Seems sweeter." "Feels thicker." "Pure bubbles."

Other: "Couldn't really taste the difference." "Difference is slight, can't pick a favorite."

IN SUMMARY: Despite what Coke spokespeople may say, there's a very discernable difference between Coke sweetened with sugar and Coke sweetened with high-fructose corn syrup. And the numbers suggest that Mexican Coke is a clear-cut favorite. Now we just need to figure how we can all get our hands on some.

UPDATE: Michael Blanding, author of The Coke Machine: The Dirty Truth Behind the World's Favorite Soft Drink brought to light an excerpt from an earnings conference call by Coca-Cola FEMSA, the Mexican bottler of Coke, in 2009. The speaker is the CFO of the company. This call highlights that Mexican Coke has lowered their mix to, basically, 70 percent local sugar versus 30 percent high-fructose corn syrup. Apparently, that ratio could be closer to 60 percent sugar and 40 percent high-fructose now.

everyone likes Mexican Coke better, right! and in a glass bottle it's like being a kid again.

you are ABSOLUTELY right!!

EnsenadaDr - 3-8-2012 at 06:44 AM

Why didn't I think of this to post?? How true this is...I love Coca Light...but with the prices of over 80 cents a bottle or 60 cents a can, which comes out to over $7 a 12 pack, I pick up my old favorite TAB at Albertson's in the states which on sale runs me less than 35 cents a can.

Tab is the preffered drink of Mormons , I have been told, So if you develop the urge to have more than one wife, at the same time..It's the TAB

Cardon Man - 3-8-2012 at 07:01 AM

USA coke sucks. Mexican coke in a glass bottle is the real deal.

Mormons??

EnsenadaDr - 3-8-2012 at 07:14 AM

Mormons are anti-caffeine, so I don't think so...besides I drank that stuff in New York as a kid...

I drink Diet Coke in the states. In Mexico, that product is too bland. Or something, but there IS a difference. I find Mexican Coke Zero much better than Mexican Diet Coke.
Wish I could kick the cola habit entirely, however, until I do, if I'm going to drink something bad for me, I'll pick the one with the most flavor.

King Corn

djh - 3-8-2012 at 07:59 AM

Was the name of one of the good documentaties about CORN in today's world. (I think)... I saw it a couple of years ago on my local Public Television station.

The politics, the huge subsidies (corporate welfare...?) the genetic manipulation and impact on farmers, the use in fuel, cattle feedlots, and high fructose corn syrup (HFCS) and its dramatic impacts on diet and health.....

If you have not seen it.... You might want to. You can form your own thoughts on it and about HFCS.

There are also some recent headlines about international bans and litigation involving Monsanto, GMO corn, etc.

Geeze, and you just wanted to enjoy a nice cold Coke in an old fashioned glass bottle... I feel bad about even bringing this up.... But some of you might want to really know the whole story....

chuckie - 3-8-2012 at 08:27 AM

My ex-boss (thank God for ex) was a Mormon Bishop or some such. He maintained that Tab had no cafeine, and swilled it by the case..He only had one wife, but she was ugly....

The key word here is not "Mormon" but "BOSS..."

It is apparent that;
You were not the "Boss."
You never were a "Boss."
You never will be "Boss"

Sweetwater - 3-8-2012 at 10:48 AM

They told me I could bring back one bottle of Mexican tequila when I crossed the border....one per month....

How much Real Coco Cola can I bring through...........?

PS......never take a Mormon on a moto trip with you......he'll swill beer the first night but revert to his Johnny Mormon image when the other elders join you the next day........

Don't bother asking how I know........:O

Woooosh - 3-8-2012 at 10:56 AM

When crossing the border north as San Ysidro there are vendors who sell 2 mini bottles of the Mexican Coke for $1 ("2X$1" is the sign) . These tiny bottles hold maybe 4 ounces. If you need a quick rush and are jonesing for an ice cold mouthful of ice cold Coke from a glass bottle - that's your ticket.

You can also buy cases of Mexican Coke in glass bottles at some San Diego CostCo's. Think it runs $17 a case though (more than double the USA coke price).

Wow...what's up with the Mormon bashing?

chuckie - 3-8-2012 at 11:39 AM

Nobody is bashing Mormons, my 2 Cousins graduated from BYU, my Uncle Ken is a Mormon...You dont have to be a Mormon to have an ugly wife...Read slower...

willardguy - 3-8-2012 at 12:06 PM

my coke always has a strong rum taste to it:lol:

chuckie - 3-8-2012 at 12:34 PM

I also find that to be true....

DanO - 3-8-2012 at 01:10 PM

I only use enough coke to achieve the appropriate rum and coke tint. Using dark rum also helps.

vgabndo - 3-8-2012 at 01:36 PM

I mostly credit Coke in Baja for helping me first learn, then reinforce and develop the use of the wonderful word DISFRUTAR.

Tab soda is my all time favorite. It's nice to meet a fellow Tab drinker. I wish Coke would distribute it in Baja.

Doesnt get any better than that! Great Pics

Both coke and pepsi are having to adjust their caramel color formula to avoid having to put a cancer warning label on their product. This is necessary to be in compliance with California regulations. That rum and coke might take on a different hue.;)

mcfez - 3-9-2012 at 07:55 AM

Mexican Coke is sold at the Sacramento Costco. My 17 year old demands that...and that alone. I agree with him...best soft drink around...

Tab! I drank that for years.....bout as good as RC Cola

RC Cola??

EnsenadaDr - 3-9-2012 at 09:13 AM

Sorry McFez...RC Cola is no match for TAB, mostly because you don't get the same caffeine kick because its a watered down version...also TAB is I believe one of the few saccharin based colas...MMMM Delicious!!!

Bajamatic - 3-9-2012 at 09:20 AM

It's sold all over LA. My wife refuses to drink the corn syrup version so we have the retailers mapped out around us. Although... She's moved on to Dark and Stormies, so now It's ginger beer we gotta stock.

Happy wife, Happy life.

Cypress - 3-9-2012 at 01:02 PM

Corn syrup? The process(chemicals etc.) is a secret. :D
