The other day our neighbor brought us a huge halibut (must have been 45 lbs +) so with part of it we made fish tacos!
I have yet to see Rick Bayless's season that features Baja California cuisine, so I can't say for sure he got the batter recipe from the famed Tacos
Fenix, BUT if you were going to feature one fish taco stand would'nt Fenix be it?
So heres the recipe from Ricks site:
http://www.rickbayless.com/recipe/view?recipeID=346
I made mine with water and used less oregano than he said, don't imagine Fenix uses beer....
Damned if the tacos did'nt taste very close to those from Fenix!
I made a toasted arbol chile sauce with roasted garlic (from our garden) anyone have any ideas on what is in Fenix's green salsa? I think its 2/3rds
jajapeno/serrano and the rest tomatillo.
very fine tacos!! And the super fresh fish help!! Fenix uses angel shark is what I've read...
sorry no pics ate them before thinking of it
