SWMBO cooks these all the time and made a Tex/Mex version today. Thought I'd share it.
Meat Mixture
1 tablespoon oil
1 pound meat (ham, sausage, chorizo, chicken)
1 med onion, chopped (about 1/2 cup)
1/2 cup chicken or veggie broth
1/2 cup frozen peas
1/2 cup frozen corn or carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
dash cumin
1 cup shredded Cheddar
Baking mixture
1/2 cup Bisquick
1/2 cup milk
2 eggs
Heat oven to 375 degrees. Spray 12 regular sized muffin cups w/ cooking spray
Cook meat in oil; add onion and broth and bring to simmer. Add frozen veggies and seasonings; heat, stirring occasionally until almost all the liquid
is absorbed. Cool 5 minutes; stir in cheese.
In a separate bowl whisk baking ingredients until just blended. Spoon 1 scant tablespoon into each baking cup.Top with about 1/4 cup meat mixture.
Spoon 1 more tablespoon baking mixture over the meat mixture.
Bake 25 minutes, cool 5 minutes and remove from tins; then cool 10 minutes.
They will be like a muffin and go great with eggs, or just by themselves with coffee. I take these for a mid-morning snack or coffee break. You can

Homemade Bisquick Mix
6 cups all-purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup vegetable shortening
Directions:

Sift flour, baking powder and salt three times into a large bowl.

Cut in shortening with a pastry blender until mixture resembles fine crumbs.

Store mixture in airtight container in the refrigerator up to 4 months.
