If going to the mainland, I would cross at Lukeville, AZ (Sonoyta, Sonora). Easy drive, small border crossing and easy to get all the paperwork done

Unless..... as some folks suspect, you are going to settle there, if I was going to San Pancho, I'd fly to PV and rent a car. Really long drive

You might consider taking the dog with you, by car. Sometimes, there are problems with the dog clearing Mex customs/vet inspection at the Mex

Gotta agree with you that a big lab in a car does take up a lot of space. Like most of it!!
The dog/customs issues we've had have been at the Los Cabos airport. I'm sure that every airport/office is different, just like the immigration
offices.
Biggest issue has been the expiration of the rabies vaccination. US vaccines have a three year expiration period. Mexico only recognizes a ONE year
vaccination period. Just re-vaccinate your furry friend before the flight and you'll be within the one year expiration period.
We were held at the Cabo airport until a local vet could come to the airport and re-vaccinate the dog and make him legal for Mexico! We still had 18
months remaining on the US vaccine.
