Burro

Sometime around Christmas or New Years, I don't really remember, a good friend stopped by our casita. He was very jovial and insisted I accept a gift from him. But of course....a few nice packages of burro.

I have eaten burro a few times at random parties in Bahia Asuncion. I always found it edible but nothing to write home about. The meat had flavor but was chewy as prepared.

Tonight I was craving a hearty meal and I thought back to the burro in the freezer. I decided to make a stew with caramerlized onions and a nice, big IPA style beer. I added a bunch of garlic, carrots, and potatoes.

Oh my, what a treat! My kids, wife, and I were all very pleased with the results. I'm going to have to replicate this for my amigo this year.

lucky you....we were just talking about how delicioso burro is and I was craving it! It is a very very healthy meat because of the desert plants these burros graze on....sweet lovely meat indeed.

I think the trick to cooking burro is long and slow....once it gets broken down it's delicious...otherwise it tastes like cheap beef stew meat. Next time, I want to simmer some burro and make chili verde with it (per my wife's suggestion).

I'm not sure if it was a male burro or not...but I can say rattlesnake is tasty...I haven't had the opportunity to try dog or cat....yet:o

burro meat was a staple in baja on the ranchos. It is a very healthy meat and much better suited to our surroundings...much more than cows and they dont destroy the desert like goats do...they are a good example of a sustainable edible resource.

I dont understand why so many are adverse to eating this but rave over ordering up a fancy dinner of cute little lambs. Young burro meat is a delicacy....most excellent BBQ'ed and the choice cuts melt in your mouth like butter...really. Ranchers here raise them for meat and they are free range of course...all natural....all organic and local...what better meat could one possible want? Certain cuts can be tough...these are usually the ones they give away which accounts for the toughness of Zac's burro!

I believe that Machaca is supposed to be burro. From what I've heard, the original machaca originates in the Sonoran Desert, and is salted and dried. It is very tasty.

the word Burrito....originated from burro meat...duh! and yes, machaca de burro is far superior to beef....if you gave mexicanos a choice between machaca de burro and beef, most would happily choose burro.

I went to a burro BBQ with Shari and crew a few years ago, up at a rancho outside of of Asuncion. A memorable experience, (from what I can remember, as there was a bunch of Tecate & tequila consumed too), and the burro meat was muy delicioso. I agree with Shari about the fact that this is probably a more sustainable and healthy meat than cattle in the Baja desert habitat.

Are there still wild burros roaming the desert in B.C.S. ?? And if so, do people hunt them ??

Actually, most of the burros roaming the wilds are in fact owned by someone.

Try taking one and the owner will come out of the woodwork. It's amazing and the locals all seem to know whose 'what' is.

No, as Shari mentioned earlier, these burros are raised for food on these ranchos, and are slaughtered at a young age so the meat is extremely tender.

So I guess my question should of been, is there a Burro industry in B.C.S. such as we see in beef or poultry ?? Or is the only way to purchase this meat from amigos ??

Every year the Naval Surface Warfare Center at China Lake, CA has a wild burro roundup to reduce the number wandering onto the airfield and test ranges. These are the put up for adoption but you must sign a contract stating that they will not be eaten.
