The biggest item I noticed here, was the lack of Ketchup as a Tomato base. Instead, a spicy Peruvian Tomato base filled that void. The finished
product had less of a sugary/tangy flavor reminiscent of Baja Mexico Ceviche. The other feature was the large chunks of Tilapia fish cured in
Lime/Lemon juice. This was SO AMAZING!!!
