Halibut tacos to die for

These are really good - make the marinade as follows:
Squeeze (2) limes
Add (2) chopped jalapenos
Add (1/2) cup chopped onions
Add (1) package taco seasoning
Add cilantro to taste
Add some vegetable oil
Take (3) pieces of thick halibut without skin and marinate for at least (1) hour or overnight in fridge, rubbing into fish occasionally.

Wrap halibut in cooked bacon (soggy - not crispy) with (2) pieces of bacon for each piece of halibut.
Cook in a hot BBQ for 4 to 6 minutes each side.
Make the tacos with whatever you normally like - cheese, tomatoes, guacamole, lettuce or cabbage, sour cream, onions, cilantro, etc. Enjoy!

You are in luck, Barb! Paul is your/our neighbour. He will probably be there before us this year. I can vouch for their amazing ability to BBQ fish. They drink Pacifico in bottles...FYI., but I sure they will happily try out a paralyzer or two with you.

I just tried this and it was great.
Compounded butter with fresh garlic, cilantro, parsley, minced serrano, lemon zest along with salt and pepper.....smear halibut with it then wrap very thin slices of potato around the fish......Pam a griddle over a grill and cook...crispy potato on the outside and moist succulent fish on the inside. A couple of hornitos and a cold one and you just died and went to heave.....See ya there....
