An easy appetizer recipe for bacon wrapped onion rings.

Ingredients
• 1 pack Bacon
• 4-5 Sweet Onions
• 2 T Black Pepper
• 1/2 cup Sriracha Hot Sauce
• 2 T Mayo
• 1 tsp Lime Juice
Cooking Directions
1. Cut onions into 1 inch thick rings and pop the internal rings out until you have a nice sturdy onion ring.
2. Brush onion with hot sauce.
3. Wrap each onion ring with bacon and secure with a skewer or toothpick.
4. Heavily cover the onion rings with pepper and smoke, grill or bake for about 90 minutes at 250-350 degrees.
5. To make the spicy sriracha mayo, combine 2 T of mayo, 1 T of sriracha sauce, and 1 tsp of lime juice. Mix well.

That same site has a recipe for cheese stuffed and bacon wrapped jalapenos that sound great except that it calls for slicing the peppers in half
lengthwise before stuffing. In my experience this leads to a gooey cheese mess when you start cooking them.
I bought a jalapeno corer from here: www.kitchenconservatory.com to remove the seeds and membrane after cutting off the stem end. This leaves them whole. Then all you have to do is
stuff with cheese (I use mixture of cream cheese and finely grated mozzarella), bacon wrap and cook over hot coals (or bake).willardguy - 4-28-2014 at 04:52 PM

Gawd. Any idea of the sodium and fat content of that "delicacy"? Those with cholesterol or blood pressure issues beware.

Moderation! That is the key. One would not want to have something like this more than once a year during a special occasion !!
