Does anyone have a recipe for Chayote squash bread?

I would think it would be very similar to a zucchini bread recipe ........

hey bob, here is 1 my sis gave me , her mom inlaw makes it and she loves it I have never tried it....



Ingredients:

2 cups all purpose flour
2 teaspoons cinnamon, ground
1 teaspoon sea salt
1 teaspoon baking soda
� teaspoon baking powder
2 cups brown sugar, +1 teaspoon
1 1/2 cups olive oil
3 large eggs
1 teaspoon vanilla extract
2 tablespoons mandarin zest
2 cups chayote, coarsely grated

Thanks. Ingredients are very similar to zucchini bread but I still don't know is what, if anything, you need to do to prepare the chayote before you grate it. Since it's very tough I heard that you needed to peel, halve and boil for about 1/2 hour before you could grate it?

By the way I notice that you changed your avatar. Does that mean you aren't going back to MT? If so, I don't blame you. Even though the part you are from is beautiful the winters are still gwad awful. My parents had the good sense to move from Butte to San Diego in 1953 when I was 14 and I never wanted to move back but do go there almost every July.

Hey Bob...here's an FYI for you if you like cooking with chayote!!!
You can substitute it for apples in Apple pie!!! After all, the main taste to apple pie is sugar and cinnamon! My gramma taught me this!
