Freshness matters with pulque more than any other drink in the world. I had pulque at a pulquería in Tlaquepaque and it was absolutely disgusting, even flavored. But I had it two hours after it was made at a dirt-floored pulquería in a back street of Santiago Matatlán, Oax. and it was absolutely enchanting.

DO NOT DO NOT DO NOT drink the canned pulque. I couldn't even swallow it, my glottis slammed shut and I got the dry heaves.
