We are hoping to whale watch out of Lopez Mateos on our next trip. We once boondocked among mangroves along the lagoon. It was OK for one night, but
if others can advise on better camping or boondocking locations in the area, I'd be grateful.

It's all the same - for miles and miles. Though, south of there, coming into Puerto San Carlos, there are a couple of turnoffs that end up at pretty
beaches. On my Baja Almanac, they are Punta Paredon (nice), and San Buto (just slightly beyond to the end of the road). The area there for camping is
fine if you're the only one - not a large area, and there are residential fenced acres adjacent. If you head to Punta Paredon, roads criss-cross from
a "main" road to mangrove entrances (for boat launch?) - but a more or less straight line will get you there. Saw mountain lion paw prints when
there. Big, wide beach.
