Chilaquiles are not a baja thing. I have eaten them all over Mexico from Matzatlan to Progresso. It is my breakfast of choice.Hook - 6-28-2016 at 06:58 AM
Yeah, chilaquiles are everywhere over here. The choices are with-without chicken, with-without egg, green or red sauce.
I like it but it can be one of the heaviest breakfast choices if they really pile on the cheese. But it makes for good, reheated leftovers. I usually
order w/o egg, with chicken and go back and forth between green and red.
