The former waiter at La Fonda, correct???

Yes, We Met Him First at La Fonda

He opened his first restaurant across from Las Gaviotas, then took over the Palm Grill in Cantamar, then renovated the Lighthouse next door when the Palm Grill was leveled to put up the VIP gas station.

He was paying the Borja family $5,000 a month rent in Cantamar.

Now he owns his own land and the building that he constructed.

snow crab = the genus Chionoecetes also known as opilio... is also known as tanner crab. is a northern ocean crab. not from southern waters. in southeast alaska we used to call them "welfare" crabs as they were the last on everyone's list for preferred crab. after Dungeness, and king.

You mean you "had crabs" at Ruben's? Could be misleading...

The tanner crab is a separate species than the ophillio. The ones we pulled from pots in bays on Kodiak Island were larger, and closer in quality to King crabs than the ophilio. On the Deadliest Catch, the Bairdi crab they go after are the Tanners.

The best crabs, are the ones that are pulled right out of the pots, cooked and eaten while still hot! They lose flavor by the hour, even with the best of care. To me, freshness is more important than species.

thanks for that. i had some suspicion that was the case. that said...nothing like eating king crab that was in the water 12 minutes ago, while anchored in a spectacular cove.

Thanks for the info. I was wondering what happened at the newest Primo Tapia/Cantamar location. I had noticed it was closed. I'll visit his new location. Can you be more specific about the new location? North or south of Puerto Nuevo and east or west side of the highway? I don't want to pass it by and have to backtrack.

del mar - 8-4-2017 at 03:48 PM

west side of the highway, you could hit with a driver south from bahia cantiles (now happy hour) or (alcatraz) ;)

north of puerto nuevo
