The tanner crab is a separate species than the ophillio. The ones we pulled from pots in bays on Kodiak Island were larger, and closer in quality to
King crabs than the ophilio. On the Deadliest Catch, the Bairdi crab they go after are the Tanners.
The best crabs, are the ones that are pulled right out of the pots, cooked and eaten while still hot! They lose flavor by the hour, even with the
best of care. To me, freshness is more important than species.
