BBQ Candied Salmon

This is a salmon recipe, though with all the great fishing down in Baja I would imagine it would work equally well on other species of fish.

Ingredients:
One salmon fillet deboned
Coarse rock salt
Demerara brown sugar

Sprinkle the fillet with course rock salt and leave on for 30 minutes. Rinse the salt off and cover the fillet with demerara sugar to your liking. (keeping in mind the more sugar the more mess it makes of your BBQ)
Cook the fillet on a medium heat, the fish is done when you see the fat (yellow to white blobs bubble up through the meat) usually 15 to 20 minutes. If there's any left after your meal it is great the next day in sandwiches. Enjoy!

demerara sugar

1. partially refined light brown cane sugar coming originally from Guyana.
2. a dark rum fermented from molasses, made in Guyana.

mid 19th century: named after the region of Demerara.
