Hola, one of my students in La Paz has to start up a business in La Paz (where he studies) for his senior project.
He wants to make fish patties and needs a meat grinder.
Does anyone have one we could borrow? Or have?
Thanks in advance.

My experience in "grinding" fish in meat grinder has not been good..The final product is more of a mush than a grind..I now use a food processor
carefully to get a more uniform product. You might want to consider that....Likley more available as wellLancairDriver - 4-1-2018 at 06:48 PM
Tell him to make Pemmican. Much more nutritious, compact, and will keep for 10 years with no refrigeration. blackwolfmt - 4-1-2018 at 07:26 PM

A better investment is a good chef's knife, a steel sharpener and a strong wrist, and lots of practice. The K.I.S.S. technique. BajaBlanca - 4-2-2018 at 07:13 AM

You might borrow one from Sheri if she still has one.RenoJoe - 4-2-2018 at 09:02 AM

Blanca, looks like most fish cakes are made with cooked fish.
I may give this recipe a try. Looks doable and filler can be added to increase volume. No fancy ingredients.
I use the very old meat grinder I bought at a yard sale many years ago. It is the old manual crank that attaches to a kitchen counter. It is still
available on Amazon and very inexpensive.
I got the idea many years ago when I watched one of the vendors at the Mercado Negro fish market in Ensenada.BajaBlanca - 4-2-2018 at 06:10 PM
Thanks Udo!
I asked about using a food processor and Alfonso prefers a grinder so I will look online for a used one.shari - 4-2-2018 at 06:32 PM
You can pick up a meat grinder that attaches to a table for about 100 pesos at the segundas...I used to use mine for making ceviche but now prefer my
food processor...also picked up for 150 pesos at a segunda.weebray - 4-2-2018 at 06:37 PM
All you need is a Bass-O-Matic mi hita. BTW I have a meat grinder if he wants to experiment. U2U to you.BajaBlanca - 4-2-2018 at 07:02 PM

The hand grinder with the coarsest setting keeps the fish at it's best. I also like to run a handful of ice cubes through it first, to lubricate and
cool the grinder.weebray - 4-3-2018 at 07:26 AM

Excellent point. I remember the skinning knives of the automatic filleting line would heat up and "cook" the flesh. It was a problem.
