Agree... those freeze dried backpack meals you add hot water to, like beef stroganoff, are my easy-style camp dinners. Unless, of course, we are near a taco stand!! Nothing wrong with you kitchen slaves, mind you... I just want to do as little work as possible when camping... it is a vacation, after all!

My wife made "Pollo a la Basura" during our last visit to Todos Santos, finding all of the ingredients in local markets. The recipe can be found here. It was perfect with a dry white wine.

Some of my fondest memories are of beach camping south of Deep Creek in Alaska. Drift wood and chunks of coal were available for cooking dutch oven dishes, or roasting foil wrapped items.

It is usually just me and my dog now, so I keep it simple and travel with minimal supplies and equipment.

Marco is THE MAN and chef! Here he is exploring Baja and cooking.
Reminds me of breaking out some hot dogs while my buddy is cooking quail! He knew how to camp and taught me that eating good was worth the effort.

We've had many good dishes cooked on an electric skillet powered by a small Honda generator.

The chicken came from "El Corral" on Ocampo in Todos Santos. We bought the produce at Lizarraga and everything else at Hermanos Martinez.

I often buy meat from those guys. They are very accommodating as to cutting meats and grinding the burger to your specifications.
Btw, good on you for knowing street names in todos. I know long time residents who couldn't tell you where ocampo street is, even though it's one of the more used roads.

Downtown Todos Santos is fairly small, but it's easy enough to avoid "Main Street" (Juarez) and find what the pueblo has to offer beyond Hotel California. We've come to realize that the real gems of Todos Santos are hiding in plain sight on Colegio Militar and its cross streets, and that it's well worth the effort to learn them. I just wish we were able to be there for more than 6 days this year!

It is customary for the clients on Baja mule trips to provide food and beverages for the guides. Our trips we take home raised by us grass fed beef, yams, chards and spinach.

We purchase locally the tortillas and cheese. Mix the greens with olive oil and cook in a foil wrap which is also how we cook the yams. Grill the beef, peppers and onions. Tacos, yams and greens!

Our guides always say it is the best food any clients have provided.
Add wine, beer and the infamous local tea and all are quite content.
