Have heard of a holding company or trust in the Los Cabos area that is really good in helping with a Fideocomiso.

I think you're talking about The Settlement Company. It provides escrow services. The owner is very well connected with Mexican officialdom in D.F.
They have a good reputation -- they do not deal with realtors, they are not attorneys or notarios. They are a third party realty facilitator. You

Just finishing two deals with Settlement Company. 7 mos on one 6 on the other. Finally had to cancel and go with a Notario. Double check and think

Under no circumstances would I recommend anyone to use the Settlement Company. U2 me if you are even thinking of it.
