While making a little ceviche, I wondered,

could this have been the motivation for the colors of the Mexican flag???

since all the photos of old are temporarily missing, a little spice for the photos forum...

Yummy! It's never too early for ceviche! You made me hungry. Only 3 more hours till lunch!

Cypress - 9-21-2006 at 09:43 AM

Wish fresh fish was available in this area.:( Ate some ceviche from what was thought to be fresh fish once, it wasn't. Damn near killed me.

You forgot green Jalapenos.....;)

United States Ceviche would not be too appealing, Tomatoes, Onions, and Blueberries :barf:

Cypress - 9-21-2006 at 11:24 AM

Taco de Baja. Huckleberries?:D Think maybe it's just got to be sliced and diced, while flipping on the filet board. Do it up before the flies find you.:D

DanO - 9-21-2006 at 11:38 AM

Hey Cypress, what about trout ceviche?

Cypress - 9-21-2006 at 11:49 AM

Dan O, Trout ceviche? Sounds good to me. Just got to catch enough to make a batch.:tumble:

You guys like sashimi the asian equivalent to ceviche? Me and some friends once stopped at this tiny little deserted island. We had some freshly caught yellowtail and one the guys pulled out some sashimi stuff and wasabi. We sat sround and devoured this thing without any utensils or napkins, just our hands. we must've looked like cavemen or something. That was my introduction to wasabi and I've been hooked since

NOTE

never eat fresh water fish raw it has parasites and tapeworns in it that will only be destroyed by cooking

only salt water fish can be eateb raw and i love it

a friend of mine did it and larned the hard way

Cypress - 9-21-2006 at 12:11 PM

Pargo, You're talking about finger food! Yummy! Don't have to wash the utensils unless your fingers get too sticky.

pargo - 9-21-2006 at 12:15 PM

Did your friend actually have tapeworms afterwards Jerry?...Oh Jeez!!

I remember that day

Sharksbaja - 9-21-2006 at 12:16 PM

we were in the Sierras. We had hiked over Kersarge Pass and into the wilderness area. There was an awful summer storm that blew in. We were soaked and cold and hungary.
My dad went down to a little pond and caught a bunch of half-breeds on flies. We had trouble maintaining a fire because of the nature of things.

Believe me when it comes to raw fish, trout doesn't cut the mustard. :barf:

Jerry is right

Sharksbaja - 9-21-2006 at 12:18 PM

about fresh water fish.
Have you been around much fresh halibut. Methinks you would think twice bout consuming THAT fish raw.....

Cypress - 9-21-2006 at 12:34 PM

Thank you all for the info regarding fresh/salt water fish and eating it raw. For some reason or another. fresh water fish, raw, never seemed like a good idea. Down south, towards the end of summer, they get pretty wormy.:):)

jerry - 9-21-2006 at 01:13 PM

all fish have worms most ppl do to lol
its just that the fresh water verity arnt killed by the acid of the lime and grow very well once inside the warmth of the human body feeding like kings and reproducing with some real nasty sideffects

jerry - 9-21-2006 at 01:16 PM

yes pargo he and everyone else that ate it got tapeworms

glad i wasnt part of that party

Last 4th of July I thought of soaking the cilantro in blue food coloring (like the celery trick back in grade school), but figured why (potentially) waste a good batch of sea bass ceviche...blue stained onions and juice didn't sound to appealing

the green jalapenos, yellows, and serranos go in last.....

Sashimi???

Tomas Tierra - 9-21-2006 at 02:01 PM

alby, yella, and blue fin are my favorites...

Yep, just when they are large visible coiled buggers...:O Yikes!

killed by"acid of the lime" hmmmm, very interesting Jerry. You are saying that fresh water fish parasites or rather worms, are not killed by ascorbic acid whereas saltwater worms are?

I realize that salmon is eaten raw and lives it's life in both environments. I have never had ceviche made from Salmon nor do I care to. They can have the worms also it states.

I'll check this out some more...intriguing

something informative from the NY Times(believe it or not)

Raw Salmon ???wouldn't even consider it....Giant squid, sea urchin, baby octopus...Yes sir, all of the above....

did I hear once that eating the wasabi and ginger with sushi is to kill parasites??can't remember....I do like my green mud!

frizkie - 9-21-2006 at 03:04 PM

In Japan they always freeze the fish first, I believe. if they are going to serve it raw. This kills all parasites.

DanO - 9-21-2006 at 03:14 PM

I find that unlikely.
