Because in those days the black and white pictures did'nt catch the true color of the mexican
burros so they hire some taggers to spray paint the burros with black stripes so it could show better in the picturesafther that

you've got the idea, since the pictures are b&W and the burros are gray, they would not show up very well on the fotographs, so they started
painting them white and then added the stripes.
