The hardest part of filleting a fish here in Loreto is disposing of the carcasses. You cannot put them in the trash, you must take them to the dump,
north of town. The access road is on a blind curve on hwy 1.
Now this guy has a faster method of getting rid of the guts. Fast-forward to near the end.
