Not Baja and not my video. I did find it amazing how fast this guy was.

Can anyone identify the knife they use? I cant seem to get my Dexter Russels that sharp.

The hardest part of filleting a fish here in Loreto is disposing of the carcasses. You cannot put them in the trash, you must take them to the dump, north of town. The access road is on a blind curve on hwy 1.:o

Now this guy has a faster method of getting rid of the guts. Fast-forward to near the end.
