Sampling of the Food for the Nomads4Ninos Golf Tournament

bajamigo - 3-28-2008 at 12:33 PM

BajaBound2005 is at home making hundreds of the tamales for the golf tournament to take place at the Baja Country Club (just south of Ensenada) on April 5, 2008. Featured are spicy pork tamales and roasted chicken tamales with salsa verde. I can state without fear of contradiction that these are the best tamales you will ever taste (unless Ferna shows up and makes a liar out of me). These babies are packed with meat, and the masa plays a very secondary role.

Here are the steps in making these tasty treats, in pictures:

Come and enjoy!

they look delicious!!

how about posting some of chema's oysters on the half shell or ceviche or thai rolls? just a thought...:light:

and are you saying that food is included in the entry fee and there won't be additional cost for those scrumptious tamales? or bajaguy's chorizo? or chema's fare? :?:

Oh man am I hungry! That is one of the best arranged and equipped kitchens I've seen. I'm really envious.

bajabound2005 - 3-28-2008 at 10:51 PM

Pictures of Chema's creations coming soon (hopefully, tomorrow)!

Sharksbaja - 3-29-2008 at 11:10 AM

Which channel is that on?:D

Kell-Baja - 3-29-2008 at 11:26 AM

Well Thanks ALOT!!! Now I'm hungry & jealous of that great kitchen. lol ;)

In addition.....

bajamigo - 3-30-2008 at 12:23 PM

...to what you've seen above, our friend, Chef Chema (executive chef at Restaurante 623 in Ensenda) will be preparing these dishes for golfers and festival-goers alike:

Fresh spring rolls with shrimp

Spring roll close-up

Oysters with mezcal

Seafood Ceviche

So come out and enjoy the food and fun at the Baja Country Club, April 5th, 2008.

How dare you show a bottle of Merlot with that nice food.

bajabound2005 - 3-30-2008 at 01:48 PM

Well, at least it isn't white zin!

bajaguy - 3-30-2008 at 01:53 PM

By the time we got to the Merlot, we had gone through everything else in the house.......

DENNIS - 3-30-2008 at 03:39 PM

What's wrong with Merlot? It's all used for wine coolers, isn't it?

bajabound2005 - 3-30-2008 at 09:40 PM

Not a damn thing wrong with Merlot! The only thing WRONG with this whole event is we need more Nomads as GOLFERS! A few slots left!

bajamigo - 3-30-2008 at 09:42 PM

Only the better ones.

oladulce - 3-30-2008 at 10:45 PM

BB2005-
When you've rested from your tamale making and the golf tourney can we see some more of that gorgeous kitchen? Those cabinets and granite are in Baja? The Mexico Baja?

Interesting. You mean you didn't see the movie??:lol:

Well, some of us have cheap employers that think we can make a living on handouts and golf whenever we like(no I don't sorry). Golf is not cheap but from what I gather, this is no cheap bunch of bartenders Nomads.;D

Ola you are right, that is a nice kitchen!

Bon Appetite! ¡Buen apetito, golfistas del compañero!

Pompano - 3-31-2008 at 07:57 AM

Those spring rolls, oysters, and tamales look fantastic! Congratulations for having such an accomplished chef demonstrating her skills. I certainly know the value of such a person...as my waistline will prove.

I particulary love spring rolls; it's too bad we are committed to the local Pinot Bass Derby here on the same day as your golf tourney...otherwise we would be there in a heartbeat just to sample the cuisine.

Plus merlot is a benediction to good health...so I am told.;D

Looks like you will have a great time. Buene Suerte!

Note: Am honing my wedge shots for your next invitational gold tourney.

Yup, it's all right here in Baja! We can't take any credit for it; it was here when we bought the house...but it certainly sold us on this house!

Please take note that Chef Chema is a man. Believe me he does a fantastic job!! We recently had him prepare dinner at our home for a party of ten.
Bajabound and Bajaamigo were in attendance. The price of admission for our charity event of $10.00 is well worth the sampling of some of Chef Chema's creations and Kathleen's Tamales. The price at the door on Saturday will be $12.00 if you did not purchase advance tickets. Please come to this wonderful benefit.

That sounds like a double dog tamale dare to me, if there ever was one! I'm sorry that I'm not going to be there to try one. I'm sure I'd devour it in an instant.

P<*)))><

bajamigo - 4-4-2008 at 08:02 PM

We'll save you some, Paulina. They freeze beautifully. Actually, that was one of the requirements the Smithsonian laid on us.
