Sampling of the Food for the Nomads4Ninos Golf Tournament


BajaBound2005 is at home making hundreds of the tamales for the golf tournament to take place at the Baja Country Club (just south of Ensenada) on April 5, 2008. Featured are spicy pork tamales and roasted chicken tamales with salsa verde. I can state without fear of contradiction that these are the best tamales you will ever taste (unless Ferna shows up and makes a liar out of me). These babies are packed with meat, and the masa plays a very secondary role.

Here are the steps in making these tasty treats, in pictures:

how about posting some of chema's oysters on the half shell or ceviche or thai rolls? just a thought...:light:

and are you saying that food is included in the entry fee and there won't be additional cost for those scrumptious tamales? or bajaguy's chorizo? or chema's fare? :?:

Well, some of us have cheap employers that think we can make a living on handouts and golf whenever we like(no I don't sorry). Golf is not cheap but from what I gather, this is no cheap bunch of bartenders Nomads.;D

Those spring rolls, oysters, and tamales look fantastic! Congratulations for having such an accomplished chef demonstrating her skills. I certainly know the value of such a person...as my waistline will prove.

I particulary love spring rolls; it's too bad we are committed to the local Pinot Bass Derby here on the same day as your golf tourney...otherwise we would be there in a heartbeat just to sample the cuisine.

Plus merlot is a benediction to good health...so I am told.;D

Looks like you will have a great time. Buene Suerte!

Please take note that Chef Chema is a man. Believe me he does a fantastic job!! We recently had him prepare dinner at our home for a party of ten.
Bajabound and Bajaamigo were in attendance. The price of admission for our charity event of $10.00 is well worth the sampling of some of Chef Chema's creations and Kathleen's Tamales. The price at the door on Saturday will be $12.00 if you did not purchase advance tickets. Please come to this wonderful benefit.
