Mexican Rice

The red is flavored with tomato and onion, the white with onion and garlic, and the green with green chile, cilantro and onion. All are pre-soaked, fried in oil with the color/flavor ingredients, then cooked with chicken stock, and arranged in the dish.

It's delicious, and fun to serve-- lots of oohs and ahs when it comes to the table.

very few naturally blue foods, theory goes that because of this very few foods can be colored blue and still be appealing to most people.
I think a notable exception is the delicious range of concotions using Blue Curacao...recipes anyone?

True Confessions

Don Alley fixed the picture for me, I would never have figured out how to do it and keep the right-side-up perspective.

And the recipe and presentation come from "Frida's Fiestas-- Recipes and Reminiscences of Life with Frida Kahlo". This might be the prettiest cookbook I've ever seen!

If the event had been smaller I would have put the flag in a rectangular earthenware baking dish I have with a fluted edge and a ring of red chiles decorating the outside, coming closer to the picture in the book.

I think something is missing in your arroz al a bandera! The next time you make it, you should find appropriate vegetable pieces to make the eagle, cactus and snake in the middle, as well!!! I think I'll work on that idea!

Maybe the red rice from the flag would do?

1 cup rice
1 or 2 tbs. oil or lard
1 tomato pureed with 1/2 onion, 1 garlic clove, salt and pepper
(I added 1 tsp red chile powder for brighter color)
1 celery stalk
1-1/3 cup chicken broth
juice of 1 small Mexican lime

Soak the rice in very hot water for 15 minutes. Drain, rinse, drain thoroughly. Sautee rice in hot oil until it sounds like sand when stirred. Add the puree and sautee until thickened. Add celery, broth and lime juice. Bring to boil, cover, cook until tender, about 20 minutes. Discard celery before serving.

While I'm at it, here are the other 2:

White rice: same as red, but use 1/2 onion, grated or pureed with 1 garlic clove. Use 2 cups of broth.

Green rice: Same as above, but puree and strain 3 poblano chiles with 1/2 small onion. Omit the celery, but add 1/4 cup chopped cilantro with the broth. Use 1 3/4 cups of broth. I roasted the chiles out of habit, but the color might have been brighter had I followed the directions correctly.:biggrin:

ELINVESTI8, yours could easily be better than mine. Tip: you may need to add a little more broth or water if the pan gets dry before the rice is done.

I'm also not big on blue foods.

I think I know what it is. It's probably the disgusting thought of eating that "blue#5" or whatever they call it. It can't be good for you. Years ago I remember when my little one came running up all worried to report tol me his poopies were blue . Gotta luv those Fruit Loops. :no:That was the end of those! Now I believe that almost all the processed foods are bad for you.

We sell a cookbook with Peruvian Potato Salad on the cover and the pots are purple. It has never sold well and I have always believed the it was because of the picture on the cover...
We also sell "Frida's Fiestas" with all of its beautiful pix. It sells much better

I love to cook and actually met my wife here at a cooking class in Tijuana. I came up with my own recipe for Baja Fried Rice years ago. If you like Chinese Fried Rice you will love this:

It's not hard and if you look at the recipe it leaves a lot of room for creativity, which is probably why I love it so much. I never make it the same way twice and it always comes out delicious.

BajaGringo, I have a Margaritaville tape with 3 versions of Jimmy Buffett, one came on a promotional cd on a bottle of Jimmy Buffett Margaritaville Tequila, another is called LIVE, with a lost verse. Another version is done by Alan Jackson. This was given to me by a friend and I am just taking the information that is typed on it. Just thought it might be of interest beings you mentions the above with the recipe for Margarita's

UPDATE: To Paula and the other nice person who gave me a recipe in u2u I won't mention your name unless you say it is ok then I will change this post to include your name. Continuing: I made both of your recipes for Mexican Rice and I am here to report back the verdict. I shared the results of both recipes with people I work with in my office and the overall consensus is that both recipes were delicious. The only complaint was that there were not enough of the rice and flour tortillas. I showed them a picture of the Mexican flag you made Paula and they wanted me to try my hand at that too. I told them. “What, are you crazy.” :lol:

You can do it EL! Just make the 3 rice recipes, then put them carefully in a rectangular dish. And be sure to present it with the green on the left:lol:

Elizabeth says that you can make the rice ahead of time and refrigerate or even freeze it until you're ready to use it,and then reheat it.

Jeez, Dennis, you really ask the tough questions!

It's a great dish for a buffet, then everyone is on the right (as in correct) side. At the beginnig of the thread I was called out-- rightly so-- for posting the photo upside down:tumble:


Edit: Another solution could be to make sure that 1/2 of thte people on the guest list are dislexic. Apologies to anyone who might be offended by this idea :dudette:

Oh, don't worry. They probably won't be able to read it anyway.
Another suggestion would be to arrange the rice [or is that rices] in concentric circles like a target, with the green on the outside. That way everything will be PC for everybody.

My suggestion: Green bean(or even a mung bean sprout) for the snake., a thin piece of potato cut out and fried dark brown for the eagle, and well.. cactus pieces for the cactus.

I don't have much interest in cookbooks, I prefer to make my own way in la cocina. HOWEVER, there was something alluring to me when Paula posted a photo of this rice dish and said it was from "Frida's Fiestas-- Recipes and Reminiscences of Life with Frida Kahlo". So last June I found the book on Amazon and ordered it to a friend in the states who just brought it down to me this week. It is a unique and worthwhile 'cook'book particularly for those of us who don't necessarily want a recipe but DO ENJOY reading about other peoples' culture of food. It does have classic traditional Mexican recipes in it but more intriguing to me are the pages of writing about the life of these particular folks and what food meant to them. The photos are wonderful. The book is an entirely nice piece of work that would fit in on the cookbook shelf or the artbook shelf or the coffee-table book shelf. And it was more like $20 rather than coverleaf price of $35.

CP, I couldn't agree more.

It is much more than a cookbook; it is a loving memoir of times and cultures past and the photography and layout are works of art.

I bought my copy in 1999. I have bought many, many cookbooks since then that get shoved into the closet or stored in the garage. This one stays up front keeping company with all the stained and yellowed workhorse recipe books in my kitchen.
