Mexican Rice

The red is flavored with tomato and onion, the white with onion and garlic, and the green with green chile, cilantro and onion. All are pre-soaked, fried in oil with the color/flavor ingredients, then cooked with chicken stock, and arranged in the dish.

It's delicious, and fun to serve-- lots of oohs and ahs when it comes to the table.

edited to include picture-- oops!

Edited to reverse flag.

Now I'm hungry, and I just ate:?:

Better flip the picture. The Mexican flag is (left to right) green - white - red.

p.s. So is the Italian flag.

Terrific....gonna steal your idea!

very few naturally blue foods, theory goes that because of this very few foods can be colored blue and still be appealing to most people.
I think a notable exception is the delicious range of concotions using Blue Curacao...recipes anyone?

Speaking of Mexican Rice, does anyone have a good recipe they would be willing to share? And yes please include any secret ingredients as well.

Oh, and Paula that dish looks very creative.

Fulano, thank you for letting me know-- my apologies for the bad flag etiquette.

True Confessions

Don Alley fixed the picture for me, I would never have figured out how to do it and keep the right-side-up perspective.

And the recipe and presentation come from "Frida's Fiestas-- Recipes and Reminiscences of Life with Frida Kahlo". This might be the prettiest cookbook I've ever seen!

If the event had been smaller I would have put the flag in a rectangular earthenware baking dish I have with a fluted edge and a ring of red chiles decorating the outside, coming closer to the picture in the book.

Paula,

I think something is missing in your arroz al a bandera! The next time you make it, you should find appropriate vegetable pieces to make the eagle, cactus and snake in the middle, as well!!! I think I'll work on that idea!

Maybe the red rice from the flag would do?

1 cup rice
1 or 2 tbs. oil or lard
1 tomato pureed with 1/2 onion, 1 garlic clove, salt and pepper
(I added 1 tsp red chile powder for brighter color)
1 celery stalk
1-1/3 cup chicken broth
juice of 1 small Mexican lime

Soak the rice in very hot water for 15 minutes. Drain, rinse, drain thoroughly. Sautee rice in hot oil until it sounds like sand when stirred. Add the puree and sautee until thickened. Add celery, broth and lime juice. Bring to boil, cover, cook until tender, about 20 minutes. Discard celery before serving.

While I'm at it, here are the other 2:

White rice: same as red, but use 1/2 onion, grated or pureed with 1 garlic clove. Use 2 cups of broth.

Green rice: Same as above, but puree and strain 3 poblano chiles with 1/2 small onion. Omit the celery, but add 1/4 cup chopped cilantro with the broth. Use 1 3/4 cups of broth. I roasted the chiles out of habit, but the color might have been brighter had I followed the directions correctly.

ELINVESTI8, yours could easily be better than mine. Tip: you may need to add a little more broth or water if the pan gets dry before the rice is done.

Lady Linguini, you'll enjoy presenting this dish at the table!

I'm also not big on blue foods.

I think I know what it is. It's probably the disgusting thought of eating that "blue#5" or whatever they call it. It can't be good for you. Years ago I remember when my little one came running up all worried to report tol me his poopies were blue . Gotta luv those Fruit Loops. :no:That was the end of those! Now I believe that almost all the processed foods are bad for you.
Blue rice sounds scary though doesn't it:lol:
Blue is a clue!;D

We sell a cookbook with Peruvian Potato Salad on the cover and the pots are purple. It has never sold well and I have always believed the it was because of the picture on the cover...
We also sell "Frida's Fiestas" with all of its beautiful pix. It sells much better

Good Job Paula. Perfect for a party in Septiembre!
