How to make guacamole.

Linguine decided to make a video for her niece on how to make a quick guacamole. Hearing her talk to herself in the kitchen, I had to investigate which explains my cameo appearance.

Our simple recipe calls for;

1/2 diced yellow or white onion
2 diced jalapenos
1 diced tomatoe
2 avocados
touch of cilantro
lime juice

We do smiler to this one but use garlic salt.

Remove skin and seed add garlic salt mish it and serve.

Here's my recipe. People seem to like it. There's never any left.

6 ripe avacados smashed but chunky
1 cup La Victoria salsa mild (without cilantro)
two chopped fresh tomatoes
garlic powder
salt
pepper
Pour over the avacado seeds to keep it fresh.
lemon on top to keep it green

I don't use cilantro because I hate cilantro. I'm not big on spicy either.

use REAL garlic, add a tablespoon or 2 of mayo or sour cream...salsa from jar? NOT IN MY GUAC! A little tabasco (or reasonable fac simile), Si!

fresh is good, but you still need the garlic salt for the right taste. You can add both.

I used to feel that way until I had some guacamole at a friend's house (who is Mexican...and the family has a Mexican restaurant). I raved about the guacamole and she told me that her secret is Pace salsa from a jar.

I am not crazy about the guacamole served in many Mexican restaurants, the kind made in a blender and it comes out like green soup. We always make our guacamole thick and chunky.

Here's my favorite

2 Hass Avocado's mashed, but still some chunks
1/3 cup diced onion
3 tbls of Herdez salsa in can to taste
minced raw jalapeno to taste
dash of garlic salt
ground black pepper
squeeze of lemon and lime to taste
dash of Worchester Sauce

If you are a garlic lover.

1 Avocado mashed

1 clove of garlic through a garlic crusher.

sprinkle very small amount of garlic salt.

mix together and dip.

Linguine likes garlic but it doesn't agree with her. I love it and would probably eat it everyday if it was up to me. (Note: I also have an aversion to sleeping alone when I have garlic breath.)

The cilantro is also added to her recipe in small quantities with more on the side because I love the stuff. She, on the other hand, doesn't care much for it except in limited amounts. Heard from a friend not too long ago that cilantro tastes like soap to a relatively large (he said 20%) number of people. As for me, the more the better.

Just ate my guacamole...mashed up (with chunks), lime juice, Pace salsa & salt. It was delicious!

When I have it on hand, I use fresh tomatoes and green onions, but Pace is awesome, too. Especially when I just want a quick fix.

Has most of the elements described above. What I've noticed that what seems to vary most are the onion and garlic ingredients.
Those two ingredients along with cilantro can make or break a great guack. One must take care to preserve the nutty and subtle flavor of the avocado.

Too much salt or adding salsa, pepper, lemon, lime or sour cream can have dire effects on the finished product. :wow:

Here is my simple recipe:

4 Hass avocados
1 tbs yellow onion PUREED
2 cloves garlic PUREED
2 roma or sm tomatoes DICED
1 pinch fresh cilantro CHOPPED (optional)
Pinch of good salt
Pinch of black pepper

Add all ingredients but tomatoes to bowl and mash till you get your desired consistency. Carefully add salt to taste if necessary.
Gently stir in tomatoes and chill.

edit:
Never EVER use powdered garlic or onion> It is sacrilege and makes you real stinky!:no::lol:
