A friend just brought me a mess of dove breasts. Been a long time since my last dove hunt, and can't quite remember how we prepared them. I remember
loving them in some kind of suace, but forgot the how and ingredients of the preparation. Nomads, here is your chance to shine.DENNIS - 12-6-2009 at 02:37 PM
Don't eat them. Take them to the church and ask forgiveness for your friend. Poor little birds of peace. Why couldn't he just bring you a chicken?

Never mind the rhetoric.
If you guys have nothing to contribute STFU.
Now I understand Daianji's frustration while asking a simple Everclear question.
Sensible answers still wanted.

We prepared them the same way after a hunt in Utah. Man, were they tasty.

They are dry so be sure to put some sort of sauce on them. My daddy always stuffed them with wild rice and covered them in cream of mushroom soup and
baked them at 350. I dont remember how long.
Ed, I have dozens of great recipes for these..

But, seeing as how we are in Baja, here is a GOOD ONE WITH PEPPERS....
JALAPENO DOVE POPPERS
Ingredients:
De-boned dove breasts
1 can jalapeno peppers
1 tub cream cheese
Bacon
Toothpicks
1. Pre-heat grill
2. Rinse and dry dove breasts.
3. Slice jalapenos in half lengthwise. (Remove seeds and veins if you prefer less heat.)
4. Slather cream cheese in the open cavity of each jalapeno. Top with a dove breast, wrap in half a piece of bacon, and secure with a toothpick.
Repeat will all breasts.
5. Grill poppers over medium-high heat for 15-20 minutes or until bacon is crisp, turning once. Salt and pepper to taste.
We have served these at Jungla's for many years and nobody has ever complained. Of course the shotguns MAY have influenced thier opinions....
Let me know if you want other recipes and Bon Apettite!DENNIS - 12-6-2009 at 05:58 PM

Here Are Some Recipes for Cooking Dove Breasts

I can't vouch for them, since I have never cooked dove, but, as JC said (Julia Child, not the other one), Bon Appetit!
Doves Hungarian style. Simmered in sour cream and paprika. Very easy, and not the same old thing.vandenberg - 12-6-2009 at 08:27 PM
Thank you folks.
Nice assortment of recipes.

Boy, would you dove hunters love the doves from my place after I've fattened them up all season. I feed all of the wild birds. But, I have to admit,
the doves have to be the most stupidest birds that I have ever come in contact with.

Here's something about morning doves that I remember as a child.
My Dad used to tell me the sounds those doves were making outside my bedroom window in the morning were.....
"Wake up.. you fool."
"Wake up.. you fool."
"Wake up.. you fool."
Okay, dammit..I'm awake.
I say....'Doves for breakfast with Ed.'DENNIS - 12-6-2009 at 08:40 PM

You have made me hungry for dove breasts por manana.
Which means I'll have to get things ready for a little dove hunt tomorrow. And that's not necessarily a bad thing at all, is it? Thanks for whetting
my appetite.
Here's another good tried and tested recipe for you.
Grilled Dove with a Pacifico Marinade
INGREDIENTS:
-10 dove breasts
-1/2 cup red wine
-1/4 cup Italian dressing
-1/2 bottle Pacifico (you know what to do with the rest)
-1 teaspoon cayenne pepper
-1/2 teaspoon salt
-1/2 teaspoon ground pepper
DIRECTIONS:
In a large bowl, mix all ingredients together except dove breasts. Then add the dove. Cover and refrigerate for at least 4 hours. Remove dove breasts
and save the marinade.
Grill dove over medium heat until golden brown.
In a large pot place in the grilled dove and the marinade you saved. Bring to a boil. Reduce heat and simmer for 15-20 minutes and serve.
Damn good.
If you don't like this, your taste buds are dead.
Adios, I'm heading to bed.Reeljob - 12-7-2009 at 08:23 AM
Only 40 years in the Coachella Valley could come up with a REAL Dove recipe:
As many Dove Breasts as you need (what limit?)
Dust with seasoned Flour (Salt, Pepper, Seasoned Salt, Small amount of Cayane Pepper
Brown in Bacon Grease
Move to Oven safe Pot with lid
Put dove with remaining sauce in Pot
Put in a coulple cloves of garlic
Pour about 3/4 cup of Dry Vermouoth
Cook in Oven about 40 minutes or until
meat is falling off the bone.
Serve with Brown Ricecapt. mike - 12-7-2009 at 08:46 AM
Pompano and Mulege Jim are spot on. Kansas dove murderer here.
also works with quail.
the bacon will keep the birds moist and don't over cook.
another thing is i drench the birds in olive oil or italian dessing before i wrap them.
bake or grill.
