hot sauce

Does anyone else besides me, put hot sauce or salsa on just about everything? I even bring my own sometimes when I go out to eat! Last month on a cruize I brought my hot sauce to breakfast and dinner. My favorite is sriracha hot chile sauce. What are others favorites?

Jalapeños en raja, La Costeña brand. Not too hot, just enough to let you know they're there.

Oh, my favorite hot sauce is "Batch #114 Hot Sauce" It's a Jamacian style hot sauce made with scotch bonnet and habanero peppers.

The battle between Cholula & Tapatio shall surely rage on forever. I keep both on hand, always...and also make sure to keep some Valentina & Bufalo close by. Oh, and if you can find some, piri-piri sauce is a must.

But I draw the line at hot saucing pizza. C'mon. Let's at least be civil.

Tabasco? A bottle of Tabasco is on just about every table/counter in every cafe in the USA and every other place that serves up a good meal. It's hot. Made down in Louisiana.:lol:

Next time you're in Mexico, buy a bottle of "Boca de Boca". Habanero. 'Nuff said. :biggrin:

BTW, my Mexicano buddies in TJ go down to OXXO every day about 3:00 and about half the time they buy a bag of chips or chicharrones and mix in the above sauce or others. These guys really put hot sauce on everything. I have always liked spicy food - grew up on "Penne all'arrabbiata", or "Gamberi alla Diavola", but this is a whole other planet of hot.

when my wife was the bartender at the Scottsdale airport's silver wings lounge many years ago - there was this regular of hers - they also had a free popcorn machine - who would dish up a bag of corn and shake tabasco all over it.

now... i love my sauces - all kinds including some i made myself after i sprung for a french Chinois and wooden pestle to work the juice off the pulp [ebay if you don't want to pay high $$ at Restoration Hardware]

but....tabasco on popcorn??!!
i have to draw the line there.

i brewed up a batch using tri color serranos, carrots, onion, garlic, vinegar and spices - incredible heat, with rich pepper flavor and a hint of sweetness!!

Herdez Casera is a family favorite. When we went to Africa we took minis of Tapatio for each camp. Sure was a hit. One of the camp managers was pretty excited as the next day they were having a group from Mexico City. So little taste of home for them.

Pico Pica hot sauce is our favorite.

A Thai hot sauce on a Mexican website???

Thinking that the combo of vinegar and sugar is part of its appeal.

Seriously, I count myself among those who really enjoy adding a bit of spice to almost anything I eat. I kinda always attributed that to the fact that during much of my adult life, I smoked cigarettes.

That said, I'm partial to El Pato. It's a green sauce, that is also very inexpensive. As for Asian hot sauces, I wonder if any Nomads have encountered Linghams Chilly Sauce. It's from Singapore, or Maylasia. Also hot, sweet and a bit of vinegar.

My father was a merchant seaman/ Master throughout his life and brought home some of this, as well as many other amazing things.

I first found a local source for it a few years back at a Dutch importer in the San Gabriel Valley. Recall that this part of the world was once part of the Netherlands' colonial empire.

Mcllhenney's Tabasco! The most famous and best hot sauce. Found on just about every table/bar/counter in the USA. Made in Lousiana on Avery Island. Lot's of history behind it.;)

Yes........the popcorn! My first bar...we had a popcorn machine to give to our clients something to chew on.... the demand for Tabasco Sauce was amazing.

Pico Pica is my favorite, Challula is my 11 year old sons favorite, my wife likes tapitillo, and we always have 2-3 others on the table that we are trying out.

Our favorite salsa is the roasted salsa from El Napilito in Cardiff, that stuff is crazy addictive once you start it is hard to stop eating the stuff.

Learned about Mcilhenny's Tabasco in the service ... was an eating necessity on "Chow Hall Row" in Biloxi MS.. Especially on SOS day's .. or "meat loaf" ... or ... or ..

During the Vietnam War, BGen. McIlhenny issued The Charlie Ration Cookbook.[4] (Charlie ration was slang for the field meal given to troops.) This cookbook came wrapped around a two-ounce bottle of Tabasco sauce in a camouflaged, water-resistant container. Count me as another lover of Pico Pica.

I've never seen it sold in Mexico, so I bring bottles of their "hot" setting down. I would call it only "moderately hot", but that's OK. Too much hot tends to mask flavor. It's the Pico Pica flavor that has sold me.

I probably have about 10 bottles of different Mexican hot sauces down here. At one point I was down to my last bit of Pico Pica, so I decided to see if ANY of them were similar.

I was surprised to discover that Salsa Huichol was actually pretty close. Huichol is pretty much the Tabasco sauce of Mexico; it's on more restaurant tables than all the others, combined, IME.

On our travels last summer, we discovered a chunky, jar-type salsa we hadnt see, that we loved. Arriba Fire Roasted Mexican Chipotle Salsa. Hotter than most mediums, it's too hot for many. If it wasnt rather pricey, it would replace Herdez' Salsa Casera as our jarred salsa.

I earned my"salsa on everything" stripes at an event in downtown Tucson, eating ground chiletepin on vanilla ice cream. It was actually pretty good. For bottled salsas, we like La Costeña Taquera. For small bottles of hot sauce, I am another lover of Sriracha (Thai), La Guacamaya, and the line of Hechiza hot sauces. If you have time and ingredients, fresh is always best. Of the fresh salsas, the simplest ones are the most attractive. One of my favorites is roasted habanero (habanero chiles, garlic, lime juice, salt and water). I add some carrot to take the edge off the heat and give more body to the salsa.

Casa Herdez cannery used to have one canned called 5 chilis. very hot but great flavor. we could only find it at Saul's market in mulege.
i have asked stateside stores that stock Herdez to get some but nada so far.

Arriba also makes a fine jarred tomatillo salsa, very chunky.

Cholula Chipolte salsa is my favorite for the morning tortilla y queso fresco.

i'll keep asking the stores in phx area i go to.
they have other herdez products in jars locally. casera is wife's fav. too mild for me.

Saul's also carrried what i remember as herdez products that were ground meat molida meat products and sardines etc wrapped/stuffed in chilis, maybe jalapenos, in cans - yummy snacks.

Tabasco Rules!! All those small time hot sauces are a dime a dozen. Yea, they're good, but the hot sauce from down in the bayou country of Louisiana sets the standard. When you sit down at most any table/bar, north or south, east or west, it's the one you'll reach for.:D

LOL! Tabasco ain't much different than white vinegar with red dye #9 and maybe a little cayenne for heat (not flavor).

There are better Louisiana hot sauces out there than Tabasco, Cypress. I prefer Trappey's, of the national brands. Or Frank's.

in Chiapas we found CHAPULINE HOT SAUCE or grasshopper hot sauce. It is only sold when these critters are in season and Les said it was really good - sorry to admit I was too squeemish to try it ....

We go through a Qt. of Tapatio every 6 weeks or so. We find the Sriracha to be a bit sweet. We have a 3 or 4 Habanero based floating around most all the time. We try to stay away from the enhanced sauses with the exception of Dave's Insanity sauce.
We also grind Pinquins (birdeyes), Habaneros. Cayenne all together go through about a pound a year.
Because of my surfing, we don't use salt this could be a reason for liking the hot. :o:o:o:o

leave the salt alone. there is more than enough in the processed crap, er food we all eat. it'll kill ya....

flush your sinuses every time you paddle out and take a big drink. you'll get the salt and think of all the minerals and trace elements in sea water.:light:
