Bernie's Carnitas/no crock pot


Julia taught me this recipe about 30 years ago.

(1) 1 tps salt
(2) 2 tps ground cumin
(3) 2 tps mild chile power
(4) 2 tps dried oregano
(5) 2 tps garlic powder
(6) ? tps cayenne
(7) 2 bay leaves
(8) 5lbs pork shoulder or butt
(9) 2 medium brown onions
(10) 2tbs Chile chipote en Diable
(11) 2 garlic cloves
(12) Two spoons vegetable oil

Combine spices 1 thru 6 and rub on meat and let set at least one hour. Cut meat into 5 or 6 large chunks
Brown meat in large pot with vegetable oil. Cover with water and add #?s 7-11( reserve one onion and ? one and add to pot). Bring to boil then reduce to a simmer cover and cook for 1 ? to 2 hours.

Let cool, drain and discard most fat. Reserve broth for soup

Pam a large cookie sheet shred meat and place on cookie sheet. I top with a thinly sliced brown onion and cilantro before baking for 30 to 45 minutes at 350 ( You may wish to leave meat in chunks rather than shredding.

Goes well with any beer and even your fingers.

Serves 4 to 6 normal people, of which I have never found in Baja
