I saute in olive oil onion, garlic and celery until translucent. Then I add rice(cooked) and a tablespoon or so of tomato paste and hot sauce to taste. Sprinkle some fresh cilantro on top just before serving. I dont really know quantities, but thats the basics.
Of your categories, I would call this one easy

allot of the Mexican cooks will first in a heavy well seasoned cast iron fry pan and Just enough oil to cote it fry the rice with some garlic until the rice is translucent. then add the onions, tomatoes, chills, salt and pepper and enough clamato juice to cover the rice. cover and cook until the rice is tender. checking , stirring and adding water as needed . this way takes a little longer but it is worth it.

variation....... when the rice is done cook until the rice starts to a little dry add a little more oil and under low heat lightly fry the rice again.

I also like to use olive oil. although the Mexican cooks don't.

they sell like hot cakes at the second hand market's. lots of people have them here and they are a part of there treasured possessions.

lencho. My friend Ana in Mulege makes flan in a pressure cooker


and has a small cast iron skillet she carmelizes her sugar in first. She cooks the sugar and then wipes out the pan with a paper towel and the puts it in a bag and its ready for use the next time. It is only used for the sugar never anything else. Her flan is the best in town,k:yes:

most of the Mexicans here that don't have a cast iron skillet wish they did.

it is a good gift to give to your Mexican friends they cost about 2 bucks at the second hand stores and the will last a lifetime.

I have a 150 year old cast iron skillit from my Grandmothers family. They settled along the Bill Williams river in western Az in the 1790's. She would never fry in anything but black iron. As for rice.....

Brown rice in Mantca with garlic and onion
add water, stewed tomatos and tomato bullion or dryed tomato paste
salt, peper and cook like normal rice.
I like some corn but can only admit this out of range of my father and since my Nana has passed on, I am sure the knuckles the head would be the reaction (from Nana, just discuss from Dad)

We do a charity dinner have been know to do 20 12" Dutch ovens full in the course of an hour.
