Mangos
All of the mango trees in the area are loaded with ripening mangos. Our neighbor brought us a bag full. Small but really sweet and juicy. Ana decided
to try a new recipe and made 2 Mango Up-side-Down Cakes. 1 for the neighbor and 1 for us.
Mmmmmmmmmmmmmmmmm
I've decided to put off starting the diet until tomorrow.

A great way to preserve them through the year is to make a chutney.
Use it to top fish, chicken or meat, poured over brie or cream cheese, as sandwich topping, as a side dish with curry, etc..
Maybe your next party can have a Mango theme ?
Pot luck - anything made with Mango !
Here is one sample recipe for peach/mango chutney.
INGREDIENTS
4 pounds sliced peeled peaches
1 cup raisins (we use white)
2 cloves garlic, minced
1/2 cup chopped onion
5 ounces chopped preserved ginger
1 1/2 tablespoons chili powder
1 tablespoon mustard seed
1 teaspoon curry powder
4 cups packed brown sugar
4 cups apple cider vinegar
1/4 cup pickling spice
1/2 cup coarse chopped almonds
DIRECTIONS
In a large heavy pot, stir together the peaches, raisins, garlic, onion, preserved ginger, chili powder, mustard seed, curry powder, brown sugar and
cider vinegar. Wrap the pickling spice in a cheesecloth bag, and place in the pot.
Bring to a boil, and cook over medium heat uncovered until the mixture reaches your desired consistency. It will take about 1 hour to get a good thick
sauce. Stir frequently to prevent scorching on the bottom.
Remove the spice bag, and ladle into hot sterilized jars. Wipe the rims with a clean moist cloth. Seal with lids and rings, and process in a barely
simmering water bath for 10 minutes, or the time recommended by your local extension for your area. The water should cover the jars completely.

Mango Upside Down Cake
2 cups sliced ripe mangos
2 Tbsp. lemon juice
1 Tbsp. margarine
1/3 cup brown sugar
1/4 cup margarine
3/4 cup sugar
1 egg
1/2 cup milk
1 1/4 cups flour
2 tsp. baking powder
1/4 tsp. salt
Pour lemon juice over mangos and let stand 15 minutes.
Melt 1 Tbsp. margarine in 8-inch cake pan or casserole. (Do not use iron skillet as mangos will darken.) Add brown sugar and cover with mango slices.
To prepare cake batter, cream margarine; add sugar and cream; add beaten egg. Sift dry ingredients and add alternately with milk. Pour over mangos.
Bake 50 to 60 minutes at 375. When cake is done, turn upside down and serve while warm.

I think he liked it!
Mango upside down cake
1 Tblsp butter melted
1/4C brn sugar packed
1 1/2C Thinly sliced Mango
1C flour, 3/4 tsp soda, 1/8 tsp salt
1/4C soft butter
2/3C sugar
2 tsp orange rind
1 tsp vanilla
1 lg. egg
1/2C plain yogurt
Melt 1 Tblsp butter in oven safe pan, sprinkle with brown sugar
Arrange mango slices over brown sugar Set aside
Combine flour, soda, salt Set aside
Beat 1/4C butter and 2/3C sugar til blended, add orange rind, vanilla and egg. Beat well
Add flour mixture to butter mixture alternately with yogurt beating well after each addition.
Pour over mango and bake 30 minutes in a 350 degree preheated oven.
Let sit five minutes and invert onto plate.
Enjoy!
