No one in their right mind goes into the free-standing restaurant business. At best- a well-run restaurant by a seasoned professsional will generate 7% profit. Not even that much if you have one inside thief (usually a bartender/cashier) or an increase in food cost, labor cost, or even utilities. Take it from someone formerly in charge of 276 restaurants for a casino company... it's better to have a freind who owns one.

7% sounds reasonable enough but my accountant might frown.

So much for cheap Mexican food, $45 a cover, WOW!!

Well, in Montana (a low cost place to live), $45 sounds a fair price for frozen lobster/shrimp, steak and 2 drinks...
If you have been around Cabo’s nice restaurants, im sure you have run into restaurants that charge $12 for a Caesar Salad whit 3 leafs, and im not talking about the places inside the fancy hotels.
And it also depends on what kind of taste you have, if cheap is what you want, McDonalds and Burger King are on the main street also.

The hardest dollar you will ever earn is made in the food service industry.:) Ask any cook, waitress, or anybody associated with it.:)

Sorry to have sounded negative Bobcat. I guess it's the many restaurant I've opened. At that level in Los Cabos- the restaurant business is highly competetive (cut-throat in hard times) and it takes a very talented and skilled hands-on operator. You would need $200-300K cash minimum -just to make it through the first season. It take apeson with a huge ego, and bigger wallet to maket the long term commitment it would take- and most of us would rather fish than sell fish at this point in our lives. :)
