Tortilla soup


Last trip to Todos Santos we went to the restaurant on the corner across from the park and had Tortilla soup, WOW.
It seemed very simple but I haven't been able to recreate it. Anybody have a good recipe to share?

Here's mine, there are lots of regional variations:

Fry dried tortillas, cut into strips until brown, but still flexible. Crisply fry some ancho or pasilla chiles and crumble. On a comal or griddle or under a broiler, put some tomatoes, white onion and garlic. Grill or broil until parts are blackened and softened. Put in a blender and blend until pretty smooth. Fry in a little lard until reduced. Add to chicken broth and heat through. Add a couple of sprigs of epazote. Put some shredded chicken, cheese (jack or chihuahua) in bowls, top with tortilla strips, and pour the broth over all. Top with the crumbled chiles and some finely diced raw, but rinsed, white onion.

OK..No pukeing here but, Campbells has a tortilla soup on the shelves of the local stores. Judgeing from the low price, it's Hecho en Mexico, about 10 Ps per can. It isn't bad.

Aren't the tortillas a little soggy in the canned soup? I haven't seen Campbell's tortilla soup, but their sopa de flor de calabaza isn't half bad with a little homemade help.

Well, yeah, just a bit but, it's Campbells and true to form, they don't put in too much of anything so, when it's time, cut up and add your own.

That restaurant is called Las Fuentes, because of all the fountains in there. Did you hear them? See them all? It is also one of the nicest palapas in the whole area. They also make one mean Mole sauce... We live 4 blocks going south from there; stop by and visit next time you're in town...
