How to prepare fish eggs/roe
Ok, before all the jokes start, I want to insist that I'm serious.
Several times while the first mate on the boat was cleaning the fish he would carefully remove the roe sacks and package them separately indicating
that they were something special but none have been able to tell me how to prepare them. In the past I have fried crapie (fresh water fish that would
barely pass as bait in Baja) roe along with the tiny filets and it tasted pretty good but I don't know what to do with a 1/2lb roe sack from a Dorado
etc. Throw it on a grill, scewer it with veggies, fry it in bacon grease? Come on Nomads, spill your guts.
I like caviar (with enough chips and beer) and would encourage civechi type recipes if anybody has one. I am looking forward to all the great recipes
forthcoming from my Nomad bretheren......dt.

Fry it. For large pieces, you might want to cut into sections similar to links of sausage. Careful, roe will sometimes pop and splatter the oil.

Roll it in corn meal, salt, pepper and fry it.
Or you can break the sack and scramble it with eggs.

After fish eyes....my favorite is the roe...depending on the type of roe as smelt roe is best fresh as it is but roe from inside a fish.....Juan
batters it in egg,garlic salt, pepper...delicious. Also as judy says....excellent addition to scrambled eggs.

depending on the fish, make caviar. Separate the eggs from the sac and wash them, then salt lightly(3 to 5% salt), have with champagne on toast.

If none of the above interests you, I have one more. Take the head, bones and roe add celery, onion and carrots and make a fish stock. The roe
really adds flavor to the stock. From that you can reduce the stock add cream and make a really good sauce.

How about this...
Massage the roe for 5 to 6 minutes. Let it rest for one hour
Prepare a mixture of corn meal, salt, pepper, and whatever fresh herb you happen to have in your garden....thyme seems to work best for me.
Heat to just before smoking a mixture, about half and half,of olive oil and butter...
Gently place each roe into the hot oil/butter.
With a slotted spoon remove the roe and drain on a linen napkin...I have tired cotton and the absorbancy just isnt there.
Serve immediately with a slice of lemon.
For the scrambled eggs
Forget the massage....rip those puppies open and toss them into some scrambling eggs...chives are a nice touch.
