Chipotle Hominy Soup


My friend and I have been doing this soup for years and it's always a hit - the trick is in the cider/beer ratio and when someone tastes it for the first time a little smile always widens on their faces. Great way to make something good on a bad-weather day. This makes enough for 4 servings so plan accordingly.

Chipotle Hominy Soup
Ingredients:
I large can white hominy (about 22 ounces, drained)
4-5 leaves fresh sage, chopped
1 small yellow onion, chopped
1 cup chopped celery
1 cup chopped carrots
4 cloves garlic, chopped
1 smoked pork shank, whole, cracked (about 6” long)
1 cup apple cider (not juice)
12 oz beer – please use something with flavor: pass on the Michelob Ultra.
1 ½ cup veggie stock
1 TB chili powder
1 chipotle in adobo sauce, diced (use one pepper, seeds and all, about a table spoon)
½ teaspoon Salt
½ teaspoon Pepper

Directions:
Sauté onion, celery and garlic until soft in a stock pot or large sauté pan
Add shank and cook for an additional 15-20 minutes stirring often - you want the outside to start to brown
Add all other ingredients and bring to boil; simmer covered for about 2 hours, stirring every 10 minutes or so.
Remove pork to a cutting board and debone, chopping up the meat, return meat to the pan.
Taste and add salt if needed; add more apple cider, ¼ cup at a time until you get the right bite of cider

They're in the package that way that I get from our local chain supermarket. Basically it's cut in half through the bone with a little bit of the skin still attached so you have 2 smaller pieces.

Being cut allows that tasty marrow to get into the sauce also! Sounds like a great recipe.
