hey i just wanted to say - i put 1/2 a bottle of my Tropical Ghost hot sauce in my wine celler for 6 months - 56 degrees and 65% relative hum , for well about 6 months i think.

well i pulled it out yesterday for some home made spicy ground molida beef and steamed (yes herb steamed - try it!!)chicken tacos.....
in frickin credible!!!!!!!!!!!:bounce:

i mean the flavors actually aged and matured even more than when it was fresh. i reserved some other kept in the refer and there IS a difference.

the heat is up and so is the sweetness.
i cannot wait - later today i am making abalone and blue-veiner jumbo shrimp c-cktails with a can i got from shari and Juan in april and the tropical ghost goes in it!

Sparky Lady - are you still brewing up this stuff???
i need to buy and hold some.
the texas fire chili sauce is still holding up but i didn't cellar it.
might try, who knows.
i think it has more to do with the fruit.
