Mango Chipolte Vinaigrette


1-Mango peeled and core removed
1-Tlbs Chopped shallots (I used gr onion)
I Tlbs garlic chopped
I Tlbs chopped cilantro (I added a bit more)
1 Tlbs chipolte chiles in adobo or to taste
1/4 cup corn oil (I used Canola)
1 cup seasoned rice vinegar
Juice of one lemon ( I used two limes)


Puree in all in blender add salt and pepper to tast if you like.

Found this at www.foodnetwork.com the Shrimp brochettes are outstanding just tooo much for me to type. My family really gave this one a Thumbs up!

I agree with your family Cyndarouh, it's delicious. I've been stuck on chipolte mayo for awhile, but this is a healthier alternative and just as good. I used a light tasting olive oil, way more cilantro, and limes - yummy! Thank you for sharing.
