My recipe for a Baja feeling
This only takes as long as it takes to cook the rice, really. So, start your rice. Then, this evening, I first re-hydrated the bell peppers we dried
from our harvest this year, and then simmered some garden fresh white onion, and finally added a diced tomato.
As the water steamed-off, I added a little veggie oil, salt, pepper, anchovie paste, Sriracha chili, garlic powder, a cup of salsa casera, and just
put a slight char on some of the peppers before adding a cup of water and reducing to a simmer.
Tonight, the tail-on pre-cooked shrimp were a good price so some went in whole, with their tails off, and some were rough diced to put put more shrimp
bites in the meal.
For fish, I used the only Yellowtail I had.
I tightened the sauce with a little corn starch.
This is the marinated type of Jurel, and it no way overpowers the flavor of the sauce. The chunks were nice and firm in the can and the pieces didn't
break-up as the whole dish was brought up to temperature just in time for the rice to be served.
The verdict?  
Nine on a ten scale!

While you're enjoying the Baja Feeling shown above, you might consider chasing it with a good read of the same name, "The Baja Feeling."
Here's a link only for illustration, but you can get a used copy from Amazon for as little as a nickle....plus shipping.
It's an excellent read, especially for us old west coast folks who remember Ben Hunter and his TV matinees out of LA.

an airplane or something.

Thanks all, I love the dishes. Got 'em at an outlet in Indiana while on an assignment years ago. (They are by"The Art of Dining" made by Sakura in
Korea the pattern is called Spectrum.)
As for the missing alcohol, I think a cold beer would be an excellent fit, but if I could only eat when I drank, I'd starve to death before kidney
failure finishes killing me.
Given a choice, I'll keep tasting the food as long as I can, and thin my blood with spring water!
This is a moderately low protein recipe. About 33 grams of protein per large serving. This one might be on the dialysis diet, but it is just barely
on the Stage III diet.
