Christmas dinner
Wondering what everyone has on the menu for Christmas dinner. Tradition at my house is ham but I'm thinking about doing beef. A standing rib roast
or beef wellington. Anyone have suggestions on how to perfectly cook the beef?

My own preference for a standing rib roast is:
Preheat oven to 350
insert meat thermometer into center of meat,
place meat in oven,
bring back up to body temerature,
SERVE LOL

tamales from the side of the road. think they'll have pavo?
My favorite tamales, purchased from an igloo cooler at a gas station in Rosarito. No pavo but great pork!
