Sierra Fish parasites


I know the locals don't keep their Sierra with the little yellow parasites but I was wondering if anyone definitively knows if they are dangerous for human consumption..... Text "Trichina' and is also found in larger Pacific Sierra.

Not looking to live dangerously but I thought I had read before that there is nothing wrong with it when cooked. Before over reaction sets in know that many fish in fresh and saltwater have parasites and are consumed as table fare.

I will bet that turning the Sierra into ceviche would kill any parasites, but if I can see them, they are not going in my mouth!

I have seen quite a few parasites in some of the cod and halibut we catch in AK, and even in a couple of salmon. Most of the fish is usable though.

The trouble is that if you cook the fish until it is 'safe' you cook all the flavor out of it. A fish should still be moist when prepared.

I am smoking this batch but believe that your smoked fish is only as good as what you start with. Two of the bigger ones I am not using due to the parasites and thought I would try to see if there is a definitive scientific answer out there. Could have sworn I read one a few years ago.

Sure you have your 'Text' spelling right? Nothing on Wiki about it, other than this:

It's a parasite only found on mammals, according to the Big W. No mention of fish. Used to was, you cooked pork 'till cremated because of 'trichinosis'.

Apology for double post. Same, have seen plenty of parasites in NW caught bottom fish. Have also been in upscale sushi restaurant and watched chef remove parasites from sushi grade fish. These little yellow parasites in the Sierra cannot reasonably be roomed and if locals are not eating them there is probably good reason.

Have caught many many dozens of Sierra and eaten my fair share of them as ceviche or sashimi and have never seen these parasites. But after enough Pacificos...

I guess it boils down to food that looks bad; when in doubt, throw it out. Simple, que no? If an animal's meat looks bad, don't eat it. Small area, cut around it. Small spot, take a divot out. If more than one fish comes to the boat with sores, release 'em all and move locations, or fish for other species.

I clean and filet hundreds of fish a year and usually only see parasites in the belly meat of marlin.

Had two of the bigger Sierra that were full of the little yellow buggers. Not something you could cut around. Confirmed this morning with my local MX fisherman expert and he confirmed that if there are just a few buggers cut them out if they are full of them recycle in the ocean.

Good Sierra day today off the beach with 10. Got the smoker going.

anyone have an opinion on Pismo Clam parasites?

we know people who will only eat them cooked into something resembling cardboard. we like to clean the guts and save the tongue and medallion for clam linguini!

I don't have a picture. They are in the flesh. When you clean them and gut them you can see them in the flesh. No need to go further. That is when the Mexicans throw them back for the crabs.
Little, almost bb sized orange semi-translucent dots.

Never had a problem with the clams central coast Baja. Love them. I do cook my mussels though....in their shell on the que.

While this article talks about Porgy fish it mentions the same parasite found in 10% of them are also found in some larger Sierra.

but seriously, a couple years ago sierra were being sold in the rancho grande market and most had parasitic sores visible on their sides. at this time a friend and long time resident of gonzaga bay related a story of a lady he new that had consumed sierra with this parasite and had recurring symptoms years later.
again this was a story related to me by a close friend and a quick google search seems to qualify it.
