Beef Machaca


Stupid question #432. Does anyone know where to buy beef machaca near Mulege or Santa Rosalia? The dried stuff that is sooooo good in burritos? I have looked around but all I can find is fish or shrimp.

Also, best place for those thin, chewy flour tortillas (used for best machaca burritos)?

Tienda by the Tackle shop on the way out of Santa Rosalia used to have it,now and then..Down where the road splits by the main hiway, on the right side, just before the hiway..best I can describe it..

In Mulegé:

We bought fresh machaca by the pound (half a kilo) at the small market on the highway at the speed bump on your way south out of Mulege just before Serenidad, we also bought excellent fresh cheese and really good flour tortillas at this little store: three main ingredients for real burritos, not to mention a freshly cooked jitomate salsa:

A friend told us he had bought good machaca in San Ignacio at the the gas station, I never stop here for gas so I'm not familiar with the place.

beef machaca is a staple food in these parts....here in our village almost all the little grocery stores have it...and usually there are a few different options so I always ask the store workers which one is the best...they usually know. Sometimes it is around the meat department.
Make sure you rinse it in water before you throw it in the pan as it can be too salty to use as is.

My machaca story


This won't help the OP with a local supplier, but may be useful for anyone driving the back road between BOLA and El Arco.

It was mid day, and I stopped at the Piedra Blanca ranch (top of the pass above San Francisquito) to check it out. I was the only one there, but a friendly lady dropped what she was doing to come over and open the kitchen for me.

I had a great machaca burro and fresh cheese, both of which they produce there in commercial quantities! If they have not just taken a load to market, it is for sale there.

They also let my well behaved old dog come on in and lay on the floor next to my table. I wouldn't even think about that with the rowdy youngster I have now.

Interesting Shari, my mom would bring the salty meat to a boil in a pan then pour the water off to get rid of the salt. Growing up on farm a lot of the meat was salt cured in the smoke house.
