Outstanding Chorizo

We have been getting a little crazy making sausages recently and were always disappointed in the chorizo until we came across this one from Seattle.

The ingredients and directions with pictures is in the blog - we follow it exactly. If you are 'merican and metrically challenged, you will need to be able to convert.

Pay special attention to the chili paste and make twice what the recipe calls for, save half for other uses - it's outstanding. By the way, if you use quality ingredients you can spend up to $100 for everything: 8 pounds of good pork shoulder and 2 pounds of back fat runs over $50 at my local butcher shop.

Here in Baja, you can get the ingredients for less than half.

Ummm, chorizo breakfast burritos sound good.

Laura's (The Wet Buzzard Bar/ at Gypsy's RV park/ next to Cielito Lindo/ San Quintín) was always good with the kids and I.
Since then, Ed's at Baja's Best Bed & Breakfast have been great. Ed claims he uses only the best chorizo. This is in El Rosario, far end of town, on the right. A Starbucks logo is painted on the side of his restaurant.
