Roosterfish
Has anyone here ever actually eaten roosterfish? I've personally never eaten it and have always heard that it is a dark maroon meat that is extremely
fishy tasting.

I have, both large and small. Caught a few 1-2 lb. range, was delicious. The one monster 56 lb'er was inedible to me, tried 4 different methods of
cooking..... didn't go to waste though. A beach vendor was very grateful to have it, later told me he had his entire extended family over for a
feast. No idea what he did with it.
I'd still eat the smaller ones in a heartbeat, but no more roosterfish boil chasing, other than to enjoy watching the carnage as they slash around the
boat; reminded me of Freddy Kruger.
I don't have a BUCKET LIST, but I do have a F***- IT LIST a mile long!

small-medium ones make an ok chowder....just ok tho..not wonderful..

Years ago I had seen them listed in a book somewhere as good eating so I tried a very small one, under 3 lbs. Tasted just like yellowtail to me but I
like catching and fighting big ones too much to ever want to repeat the experience. Much prefer to release them all.

Ditto. If there were MX fishermen around, I'd give one to them if caught. Otherwise it goes back.
Caught a 25 pound S. end of Rancho Nuevo gave it to a large family. Like others I've caught, they leave the water and fight ferociously.
Haven't tasted one and don't plan to.

I tried to eat a Jack Crevalle, which is a very close relative. It was very dark and tough, more like cheap beef than fish, but the flavor was not
bad. Tried deep frying, grilling and making jerky, and none were worth trying again. Have fun reeling them in, and throw them back for the next guy.

Small are good table fare, medium ok zarendeado style, large inedible.

The local fisherman love em where I'm at and ask me to keep them for them.
I have always caught and released them anyway thou, I enjoy releasing them.

I haven't done it, but many of the dark fishes are great smoked. Tastes like beef or jerky. Smoked a large bigeye, it was delicious. It helps if you
bleed the fish right away to eliminate cutting out all that blood in the fish (The bloodline tastes awful).

Our Mexican friend down in Baja smokes Bonita for us. I never knew Bonita could be so tasty! I used to always throw them back, but now I usually keep
a few for the smoker.

Local folk make machaca out of them as well as all the other dark meat varieties, barielete, Toro, etc....tastes fine if you know how to deal with it.
Sport guys put em back.
