Shrimp Quesadillas with Papaya Salsa


This has become our most requested recipe recently.

Ingredients
1 lb. medium shrimp peeled and deveined, cut into smallish pieces
1 TBSP olive oyl
1/2 cup onion chopped
1/2 cup bell pepper chopped
2 cloves garlic minced
2 tbsp taco seasoning (we make our own)
1-2 cups melting cheese like jack, Mex blend, mozzarella
6-8 medium flour tortillas

Heat 1 tbsp oil in large skillet, add onion, bells and garlic cook for 1-2 minutes
Add the shrimp, seasoning and cook for few minutes until shrimp turns pink
Transfer to bowl, wipe pan clean with paper towel.
Put cheese on one half a tortilla, spoon shrimp mixture, more cheese, fold in half, cook 2-3 minutes, flip and cook 2-3 minutes until golden and crispy.
Serve with the salsa

Papaya Salsa

1 large papaya, diced
1/3 cup finely chopped red onion
1/2 cup chopped red bell
1 TBSP chopped cilantro
Juice of 1 lime
2 TSP rice wine vinegar
Combine and mix well

We've noticed the raves go way up if a half-bottle of wine is first consumed, YMMV

Add some finely chopped cooked bacon to the shrimp!!!! :-)

Santiago, you keep leaving out two important instructions from your wonderful recipes!

My older sister, who was an advanced girl scout, taught me long ago that the first two steps were "Blow your nose, and wash your hands!" :yes:
